I'm having a private chef come over and cook dinner for Mrs On Post and some of her friends for her birthday. It's currently a surprise. I'm going to be there too, of course. I'll be the only man there which might be a bit weird but I am a bit weird and her friends know that so it will probably be ok.
Anyway, the chef has provided a menu that I can choose from although one of her friends is a coeliac so I just had to choose all the GF options, which meant effectively no choice but I actually think the GF options look pretty good.
Anyway, I'm on my own for wine so I thought I'd reach out to some of you cellar hedz to see if you had any suggestions for pairing. Obv going to start with champers. I don't think it needs to be particularly fine wine so much as nice wine. From what I can tell they're more into drinking it than sniffing it and trying to parse out which particular dried fruit/decomposing leaf it is they're getting a whiff off.
Canapes
Oysters with a shallot and lime dressing with salmon roe
Steak tartare on a wattle seed crisp with egg yolk gel, fried capers, pickled radish and salsa verde
Entrée
Roasted quail on a bed of sweet corn purée with charred corn, braised chestnuts and spiced balsamic glaze
Main
Wagyu beef with caramelised onion purée, charred onion, potato purée, truffled mushrooms and jus
Dessert
Chocolate and Raspberry: 70% chocolate ganache, crystallised chocolate, raspberry gel, raspberry sorbet, and freeze-dried raspberry
don't have oily vodka, whatever you do
