The French way is whisk the eggs until they are very smooth with no lumpy bits of white, slow fry in butter with a touch of salt. Don’t let it get any colour and fold it in the shape of a convex lens with pointy ends

I concur, add some nice oily fish like smoked mackeral pieces to boost protein but keeping non essential fats low.

Well yeah that’s what we professionals like to call ‘making an omelette’ heh.
I did the foldy bit at the end so I could Parmesan the outside for its salty goodness.
