Simply how much detail do you go into for your Recognised Training Record?

As little as poss without HR complaining. This may vary from not doing it at all (as I understand is the case at a particular large national firm) to doing an entry per week or so.

At the end of the day, the training record is your firm's responsibility to the SRA, not yours.

Every time I did something new I made a note of what I did, the date I did it and who I did it for
