when I have more time to cook and to find ingredients, I’m also cooking a lot from a couple of Japanese books - I particularly like Harumi’s Kitchen and her other books - apparently she’s the Japanese version of Delia - solid recipes, clear instructions, traditional but not hours and hours of prep. Delia best general but the best deliciousness to effort ratio has to be Diane Henry, Oven to Table is particularly good.
